I just went through this for the first time.
22 quarts if you have a steel oil pan.
29 quarts if you have an aluminum oil pan.

I just changed mine, 3126 deep sump 8 gal. What works really well to drain into a tank tote. I think mine is about 30 gallons or more, bought at Camping world. Works perfect. roll under, use a funnel and never spill a drop, cap and take to the recycle station and empty.

Ive read many reports that filling the deep sump with the full recommendation of 30 or 32 quarts results in blowing quite a bit of oil out the drool tube. Contributes to debris blocking the radiator or oiling up a tow'd.

If overfilled my 3126 will rather rapidly loose oil via the the extended slobber tube until the oil level drops to 28 quarts.. (then it remains at the 28 quart level for thousands of miles).

Kind regards,
Looked around for an answer. Seems like 15 with a shallow pan and 22 for deeper pan. While Googling, found this resource:

If "seems like" is not comforting, a call to the Caterpillar RV Hotline (877 777-3126) with your engine serial number will get you the correct oil capacity for your particular Cat engine.
(My 3126 is 28 quarts when changing the oil filter).
Nice to have the number. Thanks for that!

Its good to know about over filling and the loss of excess oil through the crank case vent. I have the CAT manual and i thought it said 32 quarts for the deep sump. When I checked my dip stick it was in the correct range after 8 gallons and before starting the eff engine. But the best is to call CAT with the engine serial number, they have the "as built" information.
