I've read in a couple of places elsewhere to call the CAT RV Help Desk to determine how much oil the engine requires based on the engine serial number. I gave them a call and based on the serial number i was told 22 quarts. So i conveyed that info to my mechanic who said he agreed as he had spoken with a colleague in Fresno who regularly services large trucks. The colleague also told my mechanic to go off the dipstick (see handout, the dipstick can be misleading) I drove the coach home (3 mile drive) with only 22 quarts.
After further review of the prior owners service records and a review of a CAT handout I determined that my coach has a deep oil sump and requires 30 quarts of oil. So I guess I'll got get some more oil and install it at home....

I've used 28 quarts of oil at every 6,000 mile oil and oil filter change since 2001. (20+ oil/filter changes).

Yes. Apparently 30 quarts is just a little too much for the deep sump. 28 quarts is good and will help prevent making a big mess behind the slobber tube.

I made it the full 30 quarts and recalibrated my dipstick accordingly. My slobber tube was previously extended.

If you notice oil consumption and/or misting on your trailer or toad, then like others suggested, you are better off to re-calibrate the dipstick to 28 quarts like most other members with deep sumps are doing. Even though your slobber tube is extended you may still be spewing oil out if it is too full. This has been a known issue for a very long time and it seems like the solid long term consensus is 28qts for the deep sump, resulting in no misting and no oil consumption.

Come to find out my Generator won;t start now, since my generator service. I didn't check it after they did the service until today when i was continuing to trouble shoot other issues. The mechanic told me it took a long time to do the generator service because they had to remove part of the top of the generator. I guess they went from the top down instead of opening the access door below the generator. They must have dislodged something.
I get a rapid clicking sound, like there isn't enough power. I started the coach, no problem. Any ideas?

Rapid clicking sounds like a solenoid chatter when there is a bad connection or low batteries. Is your house bank discharged? It possible that your generator may use the house batteries to start not the chassis batteries. Consider taking back to the shop...

I've been "dry camping" at my house to see how the rig works. I started the rig twice today with no issues. I'm plugged back into 30 amp shore power now. I'll try again in the am. I'm taking the rig back to get the brake controller installed and they will fix the generator if its not a battery issue....
